The perfect brunch

Have you ever thought of a brunch with savory curry waffles? Serve them with a salad made of Ambrosia™ apples and asparagus, dried tomatoes and fried egg. You will be amazed how perfectly these tastes match.

Preparation

Pour flour, egg and water in a bowl. Add sugar, salt, baking powder, curry and oil and mix with a spoon to get a smooth batter. Heat the waffle iron on the stove over medium heat (4 minutes on each side), open it and grease with a pastry brush.

Pour about half of the batter into the preheated waffle iron, close it and turn it immediately. Bake over medium heat for 2 minutes. Then turn the waffle iron again und bake for another 2 minutes. Open the waffle iron to see if the waffles are crunchy and have a golden yellow surface. Put the waffles on a plate and repeat with the remaining batter.

In the meantime, cut onion and put it in a bowl. Add thinly sliced asparagus and celery. Core the Ambrosia™ apple, cut into small cubes and add to the other ingredients in the bowl. Season with salt, olive oil and lemon juice and mix.
