Soft muffins with Ambrosia™ apples

Our soft desert rose muffins with Ambrosia™ apples are characterized by their very beautiful, special form. The roses have a soft core of Ambrosia™ apples that is wrapped in crunchy cornflakes. Enjoy this tasty mix of soft core with fine crunch outside with every bite.

Preparation

Beat eggs with sugar for about 2 minutes with the help of an electric whisk in a bowl. Add very soft butter and mix.

Then add sieved flour with baking powder and shortly mix to get a creamy, thick mixture.

Peel the Ambrosia™ apple and cut into small cubes. Add grated lemon zest, raisins (previously soaked in water and squeezed) and apple cubes to the mixture and mix with a spatola. Line the muffin pan with muffin papers or butter and flour the muffin pan.

Fill them three-quarters full with the help of an ice-cream scoop or 2 spoons. Sprinkle with cornflakes. Bake in the preheated oven at 180°C (top/bottom heat) for about 20 minutes (make the toothpick test). Remove from the oven, wait for a few minutes and remove from the muffin pan. Allow to cool on a cooling rack.
